Homemade Caramel without the Junk

Homemade caramel sauce is pure magic, transforming simple ingredients into a luscious, silky sauce with rich, buttery sweetness and a hint of smokiness. Made with just sugar, butter, and cream, this sauce develops deep caramelized flavors that are far more intense and complex than any store-bought version. The real beauty of homemade caramel is its freshness and texture-a smooth, pourable consistency that thickens perfectly as it cools, adding an irresistible touch to any dessert. With a little practice and a few insider tips, mastering caramel sauce at home becomes an easy, worthwhile indulgence you'll reach for again and again.

If you need an idea on what to use this caramel sauce on, one of my favorites is our homemade Apple Crisp recipe. There's also our fantastic Pumpkin Carmel Cake.

The more we delve into updating our diets (namely our kids' diets) to aid in the battle with ADHD, the more I love the idea of homemade recipes for the basics. Something like caramel sauce is so easy to buy but can be full of ingredients too long to pronounce and full of unhelpful and unhealthy chemicals. The homemade version lasts for weeks in the fridge and tastes so much better! A few common pantry ingredients are all that stand between you and fresh, delicious, melt-in-your-mouth caramel sauce. Try it, you won't be sorry.

The Science Behind Success

Making caramel sauce is like a delicious little science experiment in your kitchen! When you heat sugar to around 320°F, it starts to break down and caramelize, creating that beautiful golden color and rich, toasty flavor. Adding butter and cream to the hot sugar takes it to the next level-these ingredients blend together, creating a smooth, silky sauce that's hard to resist. The cream adds a hint of complexity, too, thanks to a reaction with the sugar that deepens the flavor. The trick? Keep an eye on the temperature and don't rush-sugar can go from perfect to burnt in seconds, but with a little patience, you'll get a caramel sauce that's better than anything you'd find in a store.

Equipment

  • 1 medium sauce pan
  • 1 silicone spatula

Ingredients

  • 1 cup sugar
  • ¼ cup water
  • ½ cup heavy cream
  • 4 tablespoon butter
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract

Instructions

  • Combine sugar and water in heavy bottomed sauce pan and stir to combine before placing on heat.
  • Place pan over medium-high heat and allow to cook untouched until the sugar fully dissolves and turns amber in color. Not stirring this in anyway is crucial to successful caramel. It goes against every instinct I have not to stir something on the stove but I promise, this really is a required step, don't touch it until you add the heavy cream!
  • Once the sugar is amber in color add heavy cream and stir carefully. The mixture will bubble and expand but continue stirring until well incorporated. Let this simmer for a few additional minutes to thicken slightly.
  • Remove from heat and add butter, salt and vanilla extract. Stir to combine.
  • Transfer to a glass bowl to cool completely before using. Keeps in mind this mixture will thicken significantly once cooled.
