Today, we're sharing a story that is both heart-wrenching and hope-filled: a story of survival, redemption, and joy. And it all leads up to a sweet ending: red velvet cake with cream cheese frosting, Ashlyn's favorite. This is the ultimate red velvet cake for celebrations of any kind.

A Story That Starts with a Fight for Survival
From Foster Care to Freshman Year
Ashlyn's life has never been easy. Her story begins in heartbreak, years in and out of foster care, experiencing abuse in both her biological and adoptive homes, and surviving a failed adoption. By the time she was 15, Ashlyn had endured more trauma than most people see in a lifetime.
There were nights she fell asleep in a DSS office, afraid of what the next day would hold. Would she be placed in a group home? Would she be separated from her sister again? It was in these cold, uncertain moments that Ashlyn could have given up. Statistically, she was expected to.
The Odds Were Against Her
The statistics are staggering:
- Only about 50% of youth in foster care graduate from high school by age 18.
- Fewer than 10% of former foster youth enroll in college.
- Less than 3% graduate with a college degree.
Ashlyn knew those numbers. She'd lived the story they predicted; bouncing between homes, watching people give up on her, fighting to stay connected to her sister. She could have become another number. But she didn't.
A New Home, A New Hope
Everything changed when Ashlyn and her sister were placed in a loving foster home. During that time, a high school educator named Stephanie, affectionately known as "Aunt Stephanie," began forming a bond with the girls.
What began as casual meetups, church brunches, and cookie baking soon turned into heartfelt connection. Ashlyn found herself spending more and more time at Stephanie's home. One night, her sister asked her, "If Aunt Stephanie could adopt us, would you let her?" Ashlyn said yes.
The next day, the topic came up again - this time from her foster mom. Aunt Stephanie wanted to adopt them.
"I started crying. I was so happy," Ashlyn said. "She was so happy too! We moved into her house on June 4, 2022."
Nearly a year later, the adoption was finalized. For the first time, Ashlyn and her sister had a home; stable, safe, and overflowing with love.
"I was happy but also so nervous," Ashlyn remembers. "It was a big moment in my life. A new chapter. I closed the old one and opened a new one."
Her younger sister Lauryn shared this message for Ashlyn on her graduation day:
"I'm so proud to have a big sister like you! Congrats on making it through high school! I love you so much and can't wait to see what college brings to you. You're the best big sis I could ever ask for!"
Faith Over Fear
Ashlyn gives credit to her faith in God for carrying her through the darkest times.
"Even when I felt forgotten or scared, I started to see that God was writing a story - not ending mine," she said. "He gave me the strength to keep going."
Her faith helped her push through school, even on days when trauma made it hard to focus. Through prayer, counseling, and the steady love of her new family, she started to heal. And this year, Ashlyn beat the odds.
She graduated from high school... with honors!
And this fall, she's heading to college with plans to major in Business Administration. She's not entirely sure what God has planned for her future, but she's excited to find out. During high school, Ashlyn worked for Lily Pad, a nonprofit that serves foster children, inspired in part by her own story. She could see herself working in that same industry one day. Only God knows.

The Ultimate Celebration Cake

Red Velvet Cake with Cream Cheese Frosting
Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 tablespoon cocoa powder
- 1 cup butter salted, room temperature
- 1 cup buttermilk room temperature
- 2 large eggs
- 1 -2 teaspoon red food coloring natural food coloring recommended
- 2 teaspoon vanilla bean paste
- ½ cup hot coffee
- 1 tablespoon white vinegar
For the Cream Cheese Frosting:
- 16 oz cream cheese softened
- 1 cup butter salted, softened
- 3 cups powdered sugar sifted
- 1 tablespoon vanilla extract
- ½ teaspoon salt
Instructions
Make the Cake
- Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour three 6-inch round cake pans or line with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
- Mix Wet Ingredients: In a large bowl, beat oil, buttermilk, eggs, red coloring, vanilla bean paste, hot coffee, and vinegar until smooth.
- Combine: Add the dry ingredients to the wet mixture in batches, mixing just until incorporated. Don't overmix.
- Bake: Divide batter evenly into pans and bake for 30-35 minutes or until a toothpick comes out clean. Start checking at 25 minutes.
- Cool: Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Make the Frosting
- Beat cream cheese and butter together until smooth.
- Gradually add sifted powdered sugar.
- Mix in vanilla and salt, and beat until light and fluffy.
Assemble the Cake
- Level cake layers if needed.
- Spread frosting between layers and around the entire cake.
- Chill before slicing for clean layers.
- Tip: For extra moistness, brush cake layers with simple syrup before frosting.
