No Bake Dessert Recipes — Oven Off, Flavor On

Some of the best things that come out of my kitchen never touch an oven. No bake recipes have a reputation for being the easy shortcut - and yes, they're fast - but that's never been why I make them. I make them because a no bake oatmeal cookie made on a Tuesday afternoon can stop a hard day in its tracks. Because a peanut butter pie assembled in 20 minutes somehow tastes like you planned it for a week. Because the best desserts aren't always the ones that take the longest.

This collection is for the moments when you need something sweet and satisfying without turning on the oven - summer evenings, busy weeknights, baking with kids who can't wait 45 minutes for something to come out of the oven.

The No Bake Oatmeal Cookies are the recipe I've made more times than I can count - they were the first recipe I was allowed to make completely on my own as a kid, and now I make them with my own children. Rich with cocoa and peanut butter, they set in 20 minutes and disappear faster than that. The Edible Cookie Dough is heat-treated and safe to eat raw, which makes it the kind of recipe kids ask for by name. And the no bake pies in this collection - peanut butter, chocolate mousse - are the ones I bring to gatherings when I want something impressive that I didn't stress about.
