Sunday mornings are the one day I cook for breakfast. Weekdays are obviously too busy for cooking and on Saturdays we like to go out and explore the town and new restaurants as a family.
Sundays run at a bit slower pace (though still busy with church). We use this slower pace to spend as much family time as possible before getting back to the grind on Monday. I could make scrambled eggs every Sunday and my kids would be perfectly happy. They love scrambled eggs. But where's the fun in that? Sundays are the one morning we all sit down to eat at the same time and I just adore having a cozy, comfort food like pancakes to go with it.

🥞 Buttermilk Pancakes Are So Much Better
Traditional pancake are fine and I do those when I'm out of buttermilk. But buttermilk pancakes are so much better. The tang of the buttermilk and the fluffy rise in unbeatable. These days I keep a quart of buttermilk on hand just for pancakes (it comes in handy for cake baking too). You can use the DIY method of making buttermilk from whole milk and lemon juice or vinegar. It will get a similar result but I really find it worth keeping the real stuff (from a local dairy farm) on hand.

- 1 large glass measuring cup
- 1 ladle
- 1 electric griddle or pan

- 2 cups flour
- ¼ cup sugar
- 1 ½ tsp baking powder
- 1 ½ teaspoon baking soda
- 2 teaspoon salt
- 2 ½ cups buttermilk, room temperature
- 2 eggs, room temperature
- 3 tablespoon butter, melted
- Nonstick spray for pan
