Apple fritters are one of my favorite donuts. The crispy, crunchy exterior and fall spices hit the spot every time. I made homemade donuts once and while a fun experience, frying foods in a home kitchen is not my favorite thing. So I developed this Cinnamon-Spiced Apple Fritter Bread recipe that's the best of both worlds!

Equipment

  • 1 Loaf pan
  • 1 stand mixer fitted with paddle attachment
  • 1 apple peeler
  • 1 glass measuring cup

Ingredients

  • ½ cup brown sugar
  • 1 tablespoon cinnamon
  • ½ cup butter room temperature
  • ⅔ cup sugar
  • 2 eggs room temperature
  • 2 teaspoon vanilla extract
  • 1 ½ cup flour
  • 2 teaspoon baking powder
  • ½ cup milk

Apple Filling

  • 2 cups apples peeled, cored and diced
  • 1 tablespoon cinnamon
  • 1 teaspoon cloves
  • ½ teaspoon nutmeg
  • ½ cup brown sugar

Instructions
 

  • Preheat oven to 350 degrees and spray loaf pan with nonstick spray.
  • In a small mixing bowl combine brown sugar and cinnamon and set aside.
  • In separate bowl combine flour, salt, and baking powder and set aside.
  • Peel, core and dice apples and toss with remaining filling ingredients and set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment cream together butter and sugar until light and creamy.
  • Add eggs mixing well between each addition and then add vanilla.
  • Combine wet ingredients with dry ingredients, alternating with ½ cup milk. I prefer to do this step by hand to prevent over mixing.
  • Pour ½ batter into loaf pan and top with ½ apple filling and brown sugar cinnamon mixture. Top with remaining batter and top with remaining apple filling and brown sugar cinnamon mixture.
  • Place pan in preheated oven and bake for approximately 1 hour until toothpick inserted in the center comes out with only a few crumbs. Allow to cool before slicing.
