💭 You Can't Get Enough of This Stuff!
My first experience with flourless cake was as a teen while serving at a local restaurant. That particular one had a lot of similarity to cheesecake, only chocolate. I couldn't get enough of the stuff then and have been making differing versions myself ever since.
I served this particular fudge gluten-free chocolate cake recipe to a dear, gluten free friend who's opinion I hold very highly. To my surprise, she claimed it the best flourless chocolate cake she had ever eaten. I hope you all feel the same way!

Recipe
Fudgy Gluten-Free Chocolate Cake
Equipment
- 1 double boiler
- 1 microwave safe mixing bowl
- 1 9 inch round cake pan
Ingredients
- 1 cup sugar
- ½ cup cold coffee
- ¼ teaspoon salt
- 18 ounces semisweet chocolate
- 1 cup butter
- 6 eggs
Instructions
- Preheat oven to 300. Spray round pan with nonstick spray and line with parchment paper.
- Combine sugar, coffee, and salt in microwave safe container and warm until sugar is fully dissolved.
- Melt chocolate and butter together over double boiler until completely smooth and shiny.
- Combine coffee mixture and chocolate mixture and mix well. Add eggs one at a time, incorporating after each addition and scraping bottom and sides of bowl well to ensure everything is evenly distributed.
- Pour batter into prepared cake pan and bake for 40 minutes until fully set but top retains a slightly wet appearance. Allow to cool at room temperature before transferring to refrigerator to chill overnight before slicing.
