Preheat oven to 350 degrees and spray loaf pan with nonstick spray.
In a small mixing bowl combine brown sugar and cinnamon and set aside.
In separate bowl combine flour, salt, and baking powder and set aside.
Peel, core and dice apples and toss with remaining filling ingredients and set aside.
In the bowl of a stand mixer fitted with a paddle attachment cream together butter and sugar until light and creamy.
Add eggs mixing well between each addition and then add vanilla.
Combine wet ingredients with dry ingredients, alternating with ½ cup milk. I prefer to do this step by hand to prevent over mixing.
Pour ½ batter into loaf pan and top with ½ apple filling and brown sugar cinnamon mixture. Top with remaining batter and top with remaining apple filling and brown sugar cinnamon mixture.
Place pan in preheated oven and bake for approximately 1 hour until toothpick inserted in the center comes out with only a few crumbs. Allow to cool before slicing.
